  1. Take 8 corn tortillas, cut into pieces
  2. Take 1 tbsp cooking oil
  3. Make ready 4 puya chile peppers, toasted and seeded

  5. Make ready 2 roma tomatoes, quartered
  6. Get 1 tsp salt
  7. Take 1 clove garlic

  11. Get 2 eggs, beaten
  12. Make ready 1 tbsp cilantro, chopped

Instructions to make Chilaquiles:

  1. Fry tortillas in oil until golden brown. Set aside.
  2. In a pot, place tomatoes, puya peppers, gaujillo peppers and salt. Cover with just enough water and boil.
  3. Saute onions in same pan then add chorizo and brown.
  4. Place tomatoes & peppers from pot into blender along with garlic and some of the boiled water and blend into smooth sauce.
  5. Add poblano pepper, sauce and tortilla in pan and cook at low temp. Cook until well incorporated.
  6. Add eggs and cook until eggs are done. As cilantro.
