  1. Take all ingredients for marinating kandh/surti papadi. In gujrati marinating means handovanu. Mix all masalas and kandh and surti papdi and handavu for 10-15 mins.
  2. Now cut the brinjals and potatoes and fill it with the masala prepared for filling.
  3. Now take all ingredients and mix and make a thick batter to make methi pakodas
  4. Now heat oil in a kadai, add the kandh and surti papdi layer, then with brinjals and small potatoes. Now cover and cook on slow flame. Make the pakodas and when the sabji is cooked, add the pakodas. Mix well and cover and cook for 5 mins. When done, serve with puri and rice.
