- Get 1 small beetroot - thinly scraped

- Boil the water in a cooking pot for blanching the beetroot. When it comes to a rolling boil add the scraped beetroot and allow it to boil for a minute. Switch off the flame and transfer the beetroot into a colander filled with ice cubes. This process retains the crispiness of beetroot. Keep it for 5 minutes, tossing it in between. Remove the excess water from the beetroot and set it aside.
- Take a salad bowl and add in the beetroot, carrots, tomatoes, green chilli, ginger, onions, coriander leaves and toss well. Add in the yoghurt & salt. Mix well. Beetroot Salad is ready to be served with food of your choice.
