The ingredients needed to make Boiled Tripe:

  1. Make ready 1 kg tripe (ebyenda, in one of the local languages in Uganda)
  2. Prepare 4 well ripe tomatoes
  3. Get 2 medium size onions
  4. Prepare 1 large carrot
  5. Take 1 large green bell pepper
  6. Make ready 2 tbsp royco
  7. Make ready 2 medium size aubergine(peeled, they help thicken the soup)

Steps to make Boiled Tripe:

  1. Wash the tripe thoroughly, cut into desired sizes. Was again.
  2. Put in a cooking pot (I use a pressure cooker, boil for 1 straight hour ( my favourite kitchen gadget 😊)
  3. Whilst you are cutting your veggies, royco and other spices/ herbs of your choice. add them to your ready tripe, cover and allow to boil once again for 30minutes or more.
  4. Serve with mashed matooke(like I did), posho (ugali), or whichever accompaniment you prefer 😊.
