- Peel and wash the potatoes. Dice into cubes. Cook the potatoes with a little until soft (not soggy). Slice the bell peppers and onions.
- Place a non stick pan on medium flame, heat up the oil. Pan fry the potatoes making sure each potato touches the bottom of the pan. Season with paprika, stock cube, black pepper. Flip the potatoes to slightly brown both sides. Add the garlic, bell peppers and onions.
- Stir fry for another 3 minutes. Garnish with fresh parsley or coriander leaves. I didn’t have fresh parsley so I used the flakes.
