  2. Get your Plantain peel off the back, cut them set aside.

  4. Heat the pan add oil and fry your Plantain until wel fried. Side aside
  5. Crack the eggs, add spices and a pinch of salt and beat alittle
  6. Add 2tblspn of oil into the pan, add garlic and ginger, add chopped onions and pepper, add seasonings. stir-fry.
  7. Add the fried Plantain into the beaten eggs, and mix.
  8. Add the egg mixture into the pan. Allow to fry.
  9. Low the heat, cover with lid and allow to simmer for few mins.
