Instructions to make Avocado Carbonara:

  1. In a medium sized saucepan, bring water to a boil and then add salt, black pepper, olive oil stir for a few seconds then add the spaghetti. Cook this for 7mins or until your preferable texture either al’dente or fully done.
  2. In the meantime as the spaghetti cooks, wash, peel and chop the avocado’s into small pieces, crush a clove of garlic and place in a food processor or blender. Add the other ingredients and pulse until it turns into a smooth consistency. If it’s a bit hard to smoothen add a it more oil or boiled water.
  3. Once the spaghetti is cooked take it off the heat, drain the excess water and run the spaghetti through cold water to stop it from cooking further.
  4. Take your avocado carbonara and add it to the spaghetti and toss until properly coated.
  5. Serve it while it’s still hot and garnish with permesan cheese, cherry tomatoes, cooked , black pepper etc.
