- Get 200 grams jackfruit cut into medium chunks
- Get 200 gms pointed gourd cut into halves

- Make ready 1 tomato chopped
- Get 1 tsp cumin seeds
- Prepare 1 tbsp ginger garlic paste

Steps to make Parwal Kathal Gravy:
- Boil the jackfruit (kothal) with some water, salt and a pinch of turmeric powder for 8-10 minutes on medium high flame. Drain and keep aside.
- Heat 2-3 tsp oil in pan. Fry the diced pointed gourds (parwals) until brown. Remove and keep aside.
- In the same pan add remaining oil. Add cumin seeds. When they splutter, add chopped onion. Fry onion until brown. Add red chilli powder, turmeric powder and saute for few seconds. Next add onion paste, ginger garlic paste, cumin powder, coriander powder and salt. Saute for a couple of minutes until oil separates.
- Then add chopped tomato and cook till it is soft and mushy.
- Now add fried pointed gourds, boiled jackfruits, boiled potatoes and stir thoroughly till masala coats the veggies well.
- Pour 1/2 cup of water or as needed into the mixture. Cover and cook on a low medium flame till gravy becomes thick.
- Add garam masala powder and chopped coriander leaves. Cover and switch off the flame.
- Serve hot with rice or roti.
