- Take 3 medium tilapias

- add canola oil and water to sauce pan
- set to medium high
- make sure tilapia is pre seasoned with as much desired old bay, lemon pepper, and seasoned salt.
- after water and oil is slightly boiling, add tilapia to pan.
- cover and turn down to medium. let cook for about three minutes
- uncover. make sure veggies are pre-sliced and onion diced.
- add in veggies on top of dish and season the vegetables
- cover again and let steam for about 5 minutes.
- veggies should come out cooked with slight crisp.
- serve with grits rice or mash potatoes
