- Place in the oven and roast the sausage and vegetables for 15 to 20 minutes until they are lightly browned, stirring halfway through the roasting time
- Meanwhile, rinse the rocket leaves and pat them dry. line a serving platter or four individual serving plates with the Rocket. Spoon the sausage and vegetable mixture, with their pan juices, over the the leaves and serve immediately
