- Clean and chop your mushrooms, ready to be use. At this point you may chop your garlic clove, that is if you can have it, also finely chop the parsley(you can also use basil).
- Now for the magic, place your favourite fry pan on the cooker,on high heat. Put the olive oil, with a few seconds and now toss the sliced mushrooms till they start to release the moisture, then add the chop garlic, sal&pepper.
- When the garlic start to release aroma then add the courgettes, toss for 3-4minutes, doesn’t need to get “cook”, actually you can eat it just like it is in a salad, but this step is just to warm it up,now you are ready to put the last ingredient: parsley/ basil. Place it on a plate and get ready to cook your fried egg, also an option is just to have it boil, which is a more healthier option, but that is up to you.
