- Make ready 4 cups Cooked Rice
- Take 350 g Chicken Meat (minced)

- Take 1 Tbsp Salted Black Bean (washed, drained, minced)

Instructions to make Szechuan Fried Rice:
- EGG; add 1 Tbsp of cooking oil snd cook the egg scrambled. Remove and set aside.
- CHICKEN; Heat 2 or more Tbsp of cooking oil until hot. Fry the szechuan pepper for 30 seconds or until fragrant. Then add 50 g of the szechuan pickles, mix well and fry that for 1 minute. Next add the chicken and cook it until brown on both sides. Remove and set aside.
- PASTE; Heat another 2 or more Tbsp of cooking oil until hot and fry the ginger, and garlic until fragrant. Then add the black beans and cook that for 30 seconds. Then add the chilli bean paste and fry or until the oil becomes red (30 seconds).
- RICE: Then, add the rice and mix well. Then add the remaining szechuan pickles and mix well. Taste the fried rice; if it isn’t too salty then add just 1 tsp light soy sauce and mix well.
- ASSEMBLY; Now add in the chixken and the egg and mix well. Turn off the heat. Serve and garnish with spring onions.
