- prepare shortcrust pastry and set in fridge till needed . or use premade short crust pastry .
- preheat oven to 180°C / 360°F . grease or foil line a couple patty tins and set aside till needed .
- either roll out pastry to about 2cm thickness and cut out pastry circles to fit prepared patty tins to create pastry shells , i used an egg ring for size to fit tins , and prick inside bottom of pastry shells with a fork to prevent it from rising . lightly egg wash pastry shells inside and place in heated oven for 12-15 minutes or till lightly golden , remove from heat and let cool in trays for couple minutes then remove from trays or foil cases to cool completely on a wire rack .
- in a bowl whisk the eggs then add the milk and whisk them together then pour evenly into prepared pastry shells to 3/4 full . add a tomato slice then a few bits of silver beet then some of the capsicum and a little of the basil and oregano or basil and dill then sprinkle some feta cheese in it followed by little parsley and finished with pinch of salt and cracked pepper .
- place prepared little quiches in preheated over for 12-15 minutes or till egg mix is set . garnish with parsley and serve hot . enjoy . :-) .
