- Start by chopping hot s in 1/2 inch pieces. Put 3 tbsp of oil in a pan big enough to mix all ingredients. Cook on medium low for 5 min or until lightly brown. Remove hot s from pan and DoNot drain oil.

- Add about 3 tbsp of oil to same pan you cooked the hot s and add the white parts of the scallion, the mashed ginger (about 1 tbsp or to taste) and the chopped red pepper. Saut? for 3 to 5 minutes.
- Add the chicken and hot s and saut? for a couple of minutes more, until heated through.
- Whisk the eggs together with a pinch of salt and some ground pepper. Heat 2 tablespoons of oil in a wok or large frying pan. Cook eggs as you would for scrambled eggs and put to the side.
- Add the rice little by little stirring very well, green parts of the scallion, and the soy sauce, and cook, stirring, until well heated.
- Stir in scrambled eggs, mix well and serve. Enjoy.
