- Prepare 3/4 cup uncooked quinoa
- Prepare 1 1/2 cup water
- Get 2 tsp olive oil
- Take 1/2 cup onion, diced

- Make ready 5 tbsp soy sauce

Instructions to make Quinoa Fried Rice:
- In a medium skillet, add quinoa, olive oil and water. bring to a boil and reduce heat. Cover and let simmer for about 15 minutes. Remove from heat and stir. I let it sit for a few minutes before placing in the fridge to cool.
- Add olive oil to a seperate pan. Heat and add onions. Immediately add eggs and stir.
- Add garlic and chicken. ***I cheated and used a can of organic chicken, due to lack of planning ahead, and it still came out absolutely delicious. I do recommend using fresh chicken, but sometimes it’s nice to have an easy substitute!
- Once onions (and meat, if applicable) are cooked, add soy sauce, teriyaki sauce, and peas and carrots. Stir and let simmer for about 2 more minutes.
- When cooking fried rice with actual rice, it’s best to use rice that has been refrigerated overnight. The great thing about quinoa is that I only left it in the fridge for about 30 minutes, and that was all it needed!
- So now… add that quinoa to the rest of the ingredients. I pressed down on the mixture with a spatula to add a little last-minute crispiness.
- Add salt and pepper, to taste. I barely used any salt, the soy sauce is salty enough.
- Remove from heat, and try not to eat everything at once, because it is addicting!!
