- Wash the boneless chicken and soak with 2 tsps of vinegar for 10 minutes. Wash once again and marinate with 1 beaten egg,red chilli flakes,black pepper,salt and cornflour.
- Add a tbsp oil to a deep vessel.Break eggs one by one and make bhurji adding little salt and pepper. Remove on a plate keep aside. In the vessel add another tbsp oil and add the chicken pieces. Cover and cook for 5 minutes. Open and stir fry on high for a minute. Remove on a plate.
- Keep the chopped vegetables ready. Keep the cooked rice ready.spread it on a big thali.
- Heat 2 tbsp oil in a kadhai. Saute the garlic and ginger peices first. Now add the sliced onions and saute. Next goes in the chopped carrot,sliced chillies and capsicum
- Add black pepper and stir on high flame. Add the chicken peices
- Add the sauces and spring onion greens. Stir fry on high.
- Add it to the cooked rice and mix well.
- Heat everything in the kadhai. Now add the egg bhurji and mix.
- Tasty authentic restaurant style chicken fried rice is ready.
