  1. Firstly, in a large vessel boil 6 cup water along with ½ tbsp salt. now add 2 cup pasta and stir well.
  2. Boil for 10 minutes or until the pasta turns al dente. drain off the cooked pasta and pour 1 cup cold water to stop the cooking process.
  3. In a large kadai heat 3 tbsp oil and saute 2 clove garlic. also saute ½ onion until they shrink slightly.
  4. Add carrot, green peas and capsicum, stir fry for 2 minutes without over cooking vegetables.
  5. Now add black pepper, chilli flakes and salt. give a good mix. Then turn off the flame, after that add green onion and keep a side.
  6. Prepare Red sauce for pasta, heat 2 tbsp butter. add 4tbsp maida and saute on low flame.
  7. Saute until the maida turns aromatic yet do not change its colour. now add milk and mix well.
  8. Mix until the sauce thickens without forming any lumps.further, add more milk and continue to stir Continuously.
  9. Mix continuously, until the sauce thickens. if required using a whisk break the lumps. cook until the sauce turns silk smooth and creamy texture.
  10. Now add salt and schezwan sauce or pasta sauce and mix well making sure everything is well combined.
  11. Add eggless mayonnaise. add more if you are looking for more creamy pasta.
  12. Add in sauted vegetables and combine well.now add in boiled pasta and mix gently. add 2 tbsp of boiled pasta water if the sauce thickens.
