- Prepare 1 lb Linguica, or more if you want, diced to small pieces
- Prepare 1 Medium Onion, diced

- Make ready 1 can No Salt Added Diced Tomatoes, 14.5oz

Instructions to make Portuguese Rice:
- Take the diced Linguica and cook in a frying pan over medium heat. Cook until slightly browned. Remove from the pan to let cool.
- Coat the bottom of a medium pot with olive oil. Using a medium high heat, heat the oil for about 2 minutes.
- Add the onions, garlic, black pepper, paprika, and bay leaves. Saute the onion mix until the onions are somewhat soft and translucent.
- Add the tomatoes to the onion mix and cook together for about 5 minutes. Then add the parsley to the pot, cook for another minute or two.
- Then add the water to the pot and bring to a boil. Once everything is boiling, add the rice. Remove the bay leaves.
- Stir the rice to mix everything together, then cover the pot, and reduce the heat to low. Cook for 15 minutes.
- Add the linguica into the pot, stir to mix together, cover again, and cook another 5 minutes. If you like the crispy rice on the bottom, then cook 10-15 minutes instead.
- When done, stir once and let sit for about 5 minutes. That is if you can wait that long. If not and you do not mind hot rice, then dig in!
