The ingredients needed to make Rouille:

  1. Make ready 1 x red bell pepper
  2. Prepare 2 x garlic cloves
  3. Take 3 x slices white bread
  4. Make ready 1 x lemon juiced
  5. Make ready 2 x egg yolks
  6. Make ready 10 x strands saffron
  7. Get 1/2 tsp paprika
  8. Take 1/2 tsp chilli flakes
  9. Prepare 200 ml x olive oil
  10. Make ready 1 x tsp dijon mustard

Instructions to make Rouille:

  1. Char the pepper until it is black, I used my gas hob for this. If you dont have a gas hob you can use a blow torch, or quarter and place under a hot grill or broiler skin side up. when completely charred cover with cling film and leave for 10 minutes to sweat, this loosens the skin.
  2. Rub the blackened skin away with your hands or a paper towel, half and discard the core and removed skin. Dice up the remaining flesh (dont worry about a little bit of charred skin that doesnt come off)
  3. Combine the peppers and garlic and blend until smoothish, add the diced bread and continue blending, you may need to stop every 10 seconds to scrape down the sides. When combined add the egg yolks.
  4. Keep the blender going while you add the olive oil in a slow steady stream, this is the same technique for making mayonnaise. Then add the saffron strands and the paprika.
  5. Add the chilli flakes, mustard and lemon juice.
  6. Season to taste with salt and pepper, I served mine on toast with a classic bouillabaisse, but this goes just as well as a dip with some crispy pita bread. Check out my video https://www.youtube.com/watch?v=YJ_IN8M4rko
